Table setting: the correct arrangement of cutlery. Proper table setting at home Properly set the table

  • 15.06.2019

Proper serving is always a sign of attention to guests, a way to create a festive atmosphere, as well as an indicator of the artistic taste of the hostess.

  • In this material, we will consider the rules of informal serving, that is, those that are appropriate for receiving guests at home in Everyday life and on holidays.
  • Serving at home depends on the occasion, time of day, theme and menu, but in all cases the purpose of serving is the same - to lay out the dishes and cutlery so that it is convenient and pleasant for the diners to eat.

Based on this goal, the rules for table setting were invented. In everyday life, you need to observe all these canons only on the most solemn occasions, but once you have mastered their essence, you can set the table with your own hands for any occasion - from a romantic dinner to a family celebration of the New Year.

Before you get started, take a look at two sample table settings. As you can see, it is much easier to set a homemade festive table for guests than at an official reception!

So, how to set the table? We have compiled step by step instructions in a certain sequence, describing each of the stages. In short, the most convenient procedure is as follows:

  • Tablecloth - Plates - Cutlery - Glasses - Napkins - Decor (flower vase, candles, themed decorations).

Keep in mind that a few days before the event you need to resolve all organizational issues and prepare:

  • Decide on the number of people, make a menu, put the tablecloth in order, check the quantity and quality of napkins, dishes, cutlery, think over the decor.

On the day of the reception, wipe all the dishes and cutlery clean, and then proceed to setting the table.

Step 1. First we lay the tablecloth

The main thing here is to make sure that the overhang of the tablecloth is no more and no less than 20-30 cm. A shorter overhang will look ugly, and a longer one will be inconvenient for those sitting at the table.

As for the color, you can choose either a win-win and traditional white, or lay any option you like, complement it with tracks and underplates as shown in the photo.

And here are examples of festive serving at home without a tablecloth at all.

Step 2. Arrange the plates

This part of the "serving" theory will be the most extensive. After all, the composition and combination of plates depends on the planned menu, the number of guests and the scale of the holiday.

According to the classic table setting rules, several plates can be relied on for one person:

  • Substitute large plate (serving) - it is not necessary for a daily and everyday table, and some serving styles (for example, rustic) allow its absence. The photo below shows examples of serving with and without a substitution plate.

You may also need: a medium (snack bar), a small (pie or dessert) and a deep plate for soup.

  • According to the canon, the type of deep plate depends on the type of soup. For a thick one, choose a wide one (photo on the left), for a light broth or cream soup - a bowl with or without handles (photo on the right). But this is just the rule that can be completely ignored.

As for the arrangement of plates, snack or deep plates are placed on the substitution plates, dessert and / or salad plates are placed on the left as shown in the picture on the right. This place can also accommodate a tea pair, a pie plate or, for example, a bowl for eggs on the occasion of Easter. The photo below shows options for festive serving and the composition of the plates.

  • Plates should be placed at a distance of 1.5-2 cm from the edge of the table and at the same distance from each other;
  • To prevent the snack plate from sliding on the coaster, you need to put a paper or textile napkin between them, as shown in the photo below.

Step 3. Place cutlery

Now let's move on to the layout of the devices. They are placed on the sides according to the number of changes of dishes (concave side to the table):

  • To the right of the plates are knives and spoons;
  • Left - forks;
  • You can put a teaspoon on top.

Festive serving at home does not require a large number special knives, forks and spoons. Most often, one knife, one fork and a couple of spoons (for soup and dessert) are enough.

But if necessary and desired, you can additionally set the table with special forks, knives and spoons, as shown in the following photo selection.

You can learn more about the rules for arranging devices in the next video lesson.

Step 4. We put glasses, wine glasses, glasses

Next, behind the plates, a little to the right, we put the glasses from largest to smallest. Glasses for water, red/white wine, champagne and/or a glass for juice, spirits and shot glasses are displayed depending on the drinks available and guests' preferences.

Step 5. Serve the napkins

For especially solemn occasions, napkins can be folded beautifully and artistically on a plate. For all other cases, there are no strict rules for serving napkins. They can be put in a glass of water, placed under a snack plate, put into rings, tied with a ribbon and decorated with decor.

If you set the table not for a holiday, but, for example, for dinner, then you can put napkins on the side of the plate under the forks as shown in the photo below.

Step 6. The final touch - the decor of the table

Hooray, almost done! It remains only to decorate the festive table with flowers in a vase and themed decorations. For the New Year, it can be cones, rosemary and spruce branches, for March 8 - flower buds, and for Easter - hares and willow branches. The topic of table decor should be given more attention in a separate article, but for now we offer a look at photos of beautifully decorated tables in different themes and styles.

And a little about the arrangement of dishes

In addition to serving cutlery and dishes, you need to lay out the dishes themselves with food. Here is a small reminder of how this can be done beautifully and correctly.

That's it. We wish you successful practice and cheerful, sincere holidays!

Table setting according to all existing rules is always a sign of attention from the owner of the house to his guests. Unfortunately, a properly laid table is not so often seen today, especially at home. However, table setting is a true art, once mastered, you bring beauty into your life. That is why it is so important to know the rules of table setting - in order to be able to create a festive atmosphere in your home every day for breakfast, lunch and dinner, and in holidays Surprise your guests with fantasy decorations, intricately folded napkins and sumptuous crockery.

Table setting sequence

The table should be served according to the following plan: tablecloth; dishes; cutlery; glasses, wine glasses, glasses; napkins; table decoration. For starters, table setting may seem real to someone. complex science, but after some time, when the table setting according to the rules becomes a habit, it will seem to you that this occupation is easier than a piece of cake!

Table setting begins with spreading tablecloths on the table. It would seem, what could be easier? Threw the tablecloth over the table - and it's ready. In fact, there are certain rules in this regard.

First, the tablecloth must be perfectly ironed and have presentable appearance. There is nothing good in setting the table with a crumpled tablecloth or oilcloth. The smoothed tablecloth, or rather its corners, should fall opposite the table legs, covering them evenly. There are also requirements for lowering the tablecloth from all sides - at least 25 cm and, in no case, not lower than the seat of the chair.

Such requirements were not introduced by chance, since too small a tablecloth descent on the table looks ugly, and too large - it causes inconvenience to guests. After you have covered the table with a tablecloth, it's time to start arranging the plates.

Types of plates

The purpose of most of the plates from the table above can be easily guessed by their name, however, there are also dishes that are not entirely obvious. The patty plate is used to serve croutons, patties or bread. The chill plate is used to serve various appetizer dishes such as oysters, salads or stews. The bowl plate, as you can easily guess from its shape, is used to serve several types of salads or side dishes at once. It is also used to serve fondue. Fried eggs are served in an egg plate, jam, jam or honey is placed in a socket, and a bowl is designed for serving fresh berries, jelly and fruit salads.

What kind of plates you put on the table on a festive or weekday evening depends on the number of dishes served. Serving for a two-course dinner involves one plate, for a four-course dinner - another.

Naturally, the plates on your table should be perfectly clean and dry. It is advisable to polish them to a shine before serving.

According to the rules, a snack plate (see the table above) is located in front of each chair. Do not put it on the very edge of the table, it does not look very presentable! The patty plate is placed to the left of the diner, as you can see in the photo above.

If you set a table with several dishes, in this case you place small canteens under the snack plates, etc.

Types of cutlery

  • 1,2,3,4,6,31 - spoons: coffee, tea, dessert, table, for making coffee, for ice cream;
  • 5, 7, 8, 9 - tongs: large confectionery, for asparagus, for ice, small confectionery;

After arranging the plates, you should immediately lay out all the necessary cutlery. Knives are placed to the right of the plates, forks to the left. A tablespoon is placed near the knife. For a festive dinner of several dishes, the cutlery should be laid out as follows, starting to the right of the plate: a table knife, a fish knife and a snack knife. You put a butter knife on a patty plate. If it is supposed to serve first courses, a soup spoon is placed between the snack and fish knives. If the fish is holiday table not provided, a tablespoon is placed instead of a fish one. To the left of the plates are forks corresponding to the knives in the same order in which the knives are laid out: canteen, fish, diner.

Also, do not pile cutlery one on top of the other, the distance between forks and spoons should be about 1 cm.

Table setting: glasses, wine glasses, glasses

To the right, behind the plates, we put the glasses from largest to smallest. Depending on what drinks will be served on the table, glasses for water, white / red wine, champagne, a glass for juice, a glass for spirits and glasses are sequentially set. When placing glasses, hold them by the stem so as not to leave fingerprints on the glasses themselves.

Table setting: napkins

What is a festive table without napkins? Napkins are not only a wonderful table decoration, but also a very practical thing. Napkins are linen and paper. Cloth napkins are not intended for wiping hands or face, there are disposable paper napkins for this purpose. Fabric napkins, on the other hand, are usually beautifully decorated by good housewives so that guests can put them on their laps.

Table decor

Regardless of whether you have a festive dinner or a daily breakfast, a properly served table involves decorating it with flower arrangements, fruit vases, the same cloth napkins, dishes with bright vegetables, etc.

are approaching new year holidays, and with them - it's time for noisy fun feasts. To make the celebrations memorable for a long time, it is important to think through everything to the last detail, including the correct table setting.

Smart placement

How to make a table setting according to all the canons? Just a few elementary rules will help create a cozy, relaxing environment. For a festive dinner, the table is set with a clean and immaculately ironed tablecloth, preferably white. Table setting rules for etiquette oblige each guest to put a large serving plate that acts as a stand. Plates with appetizers, soups and hot dishes are placed in it. For a solemn type of table setting, a pie plate for bakery products is indispensable, which is placed to the left of the serving plate. A knife is placed on top of the plate if various fillings and butter are provided. Sometimes you can see a cup with warm water and mint leaves for moistening fingers. A full classic table setting involves the presence of cutlery and, selected in accordance with the dishes and drinks from the menu. For an original table setting, you can even place a basket of fresh flowers in the center.

Ladies and gentlemen set

The rules for the arrangement of cutlery are not as complicated as they are thought to be. Traditionally, they are laid out along the edges of the serving plate: knives on the right, forks on the left. If dessert is promised on the menu, the soup spoon is placed over the serving plate. If there is no dessert, the spoon is moved to the first knife. At the same time, a simple rule for serving cutlery applies: the most extreme are intended for dishes served first, then the cutlery is taken in order of priority. According to existing rules, the set of cutlery includes a small snack fork and knife, served with cold and some hot snacks. Cutlery is larger for the first and second courses. Fish utensils are easy to recognize by a fork with 3-4 prongs and a hole for bones, as well as a knife in the form of a spatula. Etiquette cutlery also includes a dessert set consisting of a knife, fork and spoon.

Table arsenal

Skillfully handling lobsters and oysters is an undeniable talent. But do not forget that etiquette is also provided for ordinary dishes. Rules for the use of cutlery in relation to soups are simple. If they contain meatballs, pasta or large vegetables, they should be carefully broken with a spoon. If the soup is served in a cup, the broth should be drunk intelligently. Chicken is allowed to be eaten with hands only in the family circle. At a dinner party, you will have to wield a fork and knife.

Meat dishes like chops or escalope are eaten with them, cut into pieces. According to the rules of etiquette, cutlery for schnitzel, goulash and chopped cutlets is a fork and no knife. Garnish, vegetables, pasta, scrambled eggs and puddings will also do without it. But sandwiches, pies and pies require both a fork and a knife. Separate cutlery and rules exist for caviar, pate and mustard. They are collected with a small spoon and spread on a slice of bread.

Secret signs

The rules for using cutlery in a restaurant imply some nuances. If you have paused but are about to return to your meal, cutlery etiquette recommends placing the fork and knife with the handles on the table and the tips on the plate, slightly turned away from you. If you need to leave the table, but you haven't finished your meal yet, cross the cutlery on the plate so that the tines of the fork are pointing to the left and the blade of the knife is pointing to the right. The rules of etiquette for cutlery after eating say that they should be placed parallel to each other. Imagine that the plate is a clock face and place them on the number 5 or 7. If you have just finished your soup, leave the spoon in the plate. By the way, the rules of cutlery etiquette solve the dilemma of which way to tilt the plate with the remnants of soup - away from you or towards you. Let the last drops of soup remain in the bowl, you won't offend anyone.

keep forever

Knowing how to store cutlery in the kitchen is just as important. Standard trays or trendy organizers with sections are equally practical. In any case, always separate knives, forks and spoons. Especially keep clean silver cutlery separately. Rinse them in hot water after use. soda solution(50 g of soda per 1 liter of water) and wipe well with a velvety cloth. From excess moisture, silverware fades. Porridge from ammonia, tooth powder, soda and water in equal proportions.

Caring for everyday cutlery is even easier. The usual ones will suffice. Treat stubborn dirt with lemon juice and rub with a woolen cloth with toothpowder. Corrosive odors will go away if you rub the appliances vegetable oil or vinegar. And to make spoons, knives and forks sparkle like new, dip them for a few seconds in potato broth, then wipe dry.

As you can see, there is nothing wrong with the rules for using cutlery. Having mastered them without difficulty, you will look like a true aristocrat even at a royal dinner party.

Today we will talk about how to set the table beautifully and correctly, citing as an example a photo of serving for various holidays or everyday dinners. Proper table setting says a lot about the hostess, her education and taste, because one of the basic norms of ethics is the ability to set the table, know the purpose of all cutlery and use them correctly.

Tablecloth selection

First of all, a tablecloth is laid on the table, it would seem that this is understandable, however, this business has its own subtleties. The tablecloth must be absolutely clean, smoothly ironed, otherwise it will only become an indicator of your untidiness. After you set the table with it, check that it has an equal length everywhere, and at the same time does not hang too low, as long edges can cause inconvenience for guests, and besides, they can be accidentally pulled, which will be an unpleasant end holiday. Too long ends can be secured with fabric snaps, which most often have an interesting design.

Also, the tablecloth should not be too short, otherwise it will look like the girl was wearing a dress several sizes larger. In the absence of a tablecloth or the desire to set the table in an unusual way, you can use special large napkins for each person. Please note that these are not the ones that lay on your knees or wipe your mouth with, they are much denser in material, have big size, as they should fit plates, cutlery, glasses.

Serving rules

The next step is to arrange the plates, they are placed on top of each other depending on the size and purpose. Three types are most often used: soup, snack bar, dining room. They are put on the countertop in reverse order, as the guest will start with soup, then move on to snacks, simply removing the already used plate from above.

Knives are placed to the right of the plate, followed by spoons in order of use. Today, the number of devices, their location are not determined as strictly as before. Since the design itself plays a huge role, based on which, according to the idea, a teaspoon can be located not at all at the plate, but, for example, next to a saucer for cakes or served only with tea. The forks are placed on the left side with the teeth up, so the sooner it is used, the closer it is to the plates. This arrangement of cutlery contributes not only to ease of use, but also helps guests not to get confused.

Dessert cutlery is placed behind the plate, perpendicular to how all the rest are stacked. There, with right side there are several glasses. There must be a glass for soft drinks: juice or mineral water. Also about 2-3 glasses, each designed for a certain type of alcohol.

Types of glasses

Let's start simple, everyone knows what a flute glass is, as traditionally, especially on New Year, champagne is poured into it. Although glasses of this shape are also suitable for sparkling wines. The main feature is the upwardly elongated shape, which allows the foam to rise and air bubbles to play inside the liquid.

Red wine glasses are just as easy to imagine for most, they have a thin stem, a rounded bottom, are quite bulky and taper towards the top. However, the type of glasses varies greatly depending on the type of wine, for example, glasses for Burgundy and Montrachet have a much larger volume, more like a ball or pear, tapering less towards the top. However, quite rarely people at home and even far from always in restaurants follow such subtleties.

A glass for white wine has a more elongated shape, it looks more like an oval. Usually two types of wine glasses are placed side by side, a glass or a glass for the selected strong drink is added to them, and other glasses are brought as needed. Otherwise, the whole table will be filled exclusively with glasses of different types.

A glass for whiskey or cognac is low, with a thick bottom, expanding towards the top, has a simple, fairly spacious shape. The martini glass is shaped like an inverted triangle, so it's not difficult to recognize it at all. For cocktails, straight glasses, glasses or two-tiered complex shapes are used. If you do not arrange a bar separately, then it is better to place small saucers with lemon, lime, olives next to the bottles.

Placement options for napkins

When serving, three types of napkins are used:

  • decorative;
  • napkins, creeping on your knees;
  • wipes adapted for wiping hands or mouth.

Napkins that are placed on the lap can be placed on top of the soup plate, folded nicely. Thus, a person sitting at the table will immediately understand what it is intended for. On top of it, you can put a small postcard with the name of the guest or a nice short wish. You can add to the postcard miniature flower or a piece of spruce branch.

Decorative napkins are usually placed under the plates, sometimes additionally and between them. They can be folded into triangles, diamonds, or overlapped so that the colors are intertwined. In addition, you can also put small lace napkins under candles or glasses.

The most ordinary napkins are usually located under the cutlery, or behind the plates, but only one at a time. There should be a few more napkin holders in the center so that guests can easily use any number they may need.

  • red;
  • green;
  • white;
  • gold.

It is better to combine gold only with white, for example, white tablecloths, beige napkins, white dishes, several of which can be with a gold or black border, the pattern can also be in the form of specks. Transparent wine glasses can also be supplemented with gold ribbons, white candles can be placed in golden candlesticks. This design is considered one of the most stylish and is quite traditional in America, where the New Year can be called the main holiday. You can also create a more relaxed design by placing decorations in bright colors on a snow-white tablecloth.

Holiday in nature

Perhaps one of the most beautiful views serving is a combination of boho, rustic and natural styles. The rustic style implies maximum closeness to nature, therefore, for the most part, natural materials are used in it, and dishes and decor are chosen in soothing natural shades. Wedding tables are often decorated in such a decor, on which there are always a lot of bouquets made in delicate color variations, the main elements of which are again wild flowers.

Napkins are selected from canvas and white lace, cutlery can be tied with lace beige ribbons, and glasses can also be decorated with them. The abundance of lighting is also characteristic of all three styles, however, the color variations are far from being as bright and bold as in boho. Often garlands with white or yellow bulbs are chosen, which can be hung over the table or laid out on it, they can also be hung around on trees or braided around trunks.

Candles or other lighting fixtures do not have to be exclusively white, but it is better to turn to pastel colors. It can be beige, light green, lilac, or pale pink - these colors can be used throughout the interior. But again, make sure they match.
