We are used to the fact that in a regular soup all the ingredients are cut, but in this version, the puree soup is very original. Puree soup, or as it is also called cream soup, is prepared very quickly, since it does not require messing with meat broth to prepare it. And this saves time in the region of one hour.

Ingredients

  • Cauliflower - 700 grams
  • Potatoes - 2 pcs.
  • Carrots - 2 pcs.
  • Onion - 2 pcs.
  • Cream (10-33%) - 200 grams
  • Garlic - 2 cloves

First you need to prepare the vegetables, namely, wash, peel and cut into any shape, and disassemble the cabbage into inflorescences. Do not grind too much, because in the future, after heat treatment, we grind them in a blender.

In a thick-walled saucepan, in a cauldron or in a deep frying pan, melt a piece of butter and fry the onion until transparent and lightly browned. Butter can be replaced with vegetable oil, but for such soups better fit first.

After that, lay all the other chopped vegetables and fill with water. The water should completely cover them.

Bring to a boil, salt, pepper to taste and put a couple of pieces bay leaf. Cook for 25 minutes, and 5 minutes before the end, squeeze a couple of garlic cloves through a press.

Pour the broth into a separate container, and grind the boiled vegetables with a blender to a puree state. Gradually add the broth to even out the desired consistency, but remember, there will still be liquid cream. At the end, add them and mix.

Cream can be of any fat content, and if you don’t have them or you just don’t want to add them, then serve cream soup with sour cream at the very end.

Everything is ready! It is best to serve a similar cream soup with herbs or crackers.

Oven baked cauliflower with egg and cheese

In the autumn season, I want to cook original dish from a magnificent vegetable - cabbage, but not simple, but cauliflower. I also wish it tasted good. I want to share with you an interesting recipe, according to which the dish turns out to be very tasty and it is not difficult to cook according to it. It is enough to add a few simple products, and you will have not only tasty, but also healthy food on your table.

Ingredients

  • Cauliflower - 1 velok
  • Cheese - 150 grams
  • Eggs - 2 pcs.
  • Sour cream - 250 grams
  • Butter - for greasing the mold
  • Italian herbs - 1 tsp
  • Nutmeg - on the tip of a knife

To rationally use the time, put a pot of water on the fire, and we ourselves will take care of the cabbage. We divide it into inflorescences and while we do this, the water will boil. It needs to be salted and boil our cabbage in it for literally 3 minutes, after boiling.

In the meantime, the cabbage is cooked, grate the cheese on a fine grater and make an egg-sour cream filling.

Combine eggs, sour cream and all spices. Mix until smooth.

Add half of the grated cheese to the filling and mix, and leave half for sprinkling.

The cabbage is cooked, it needs to be thrown into a colander and given excess water drain.

Lubricate the baking dish with butter, spread the cabbage and fill it with our filling. Sprinkle the remaining cheese on top.

Try to cook this dish and you will be delighted. Banal cauliflower with French sauce, well, just perfect.

And for this recipe, in addition to the products, you will also need a kitchen scale, since I will lay out the amount of ingredients in grams. I want your bechamel sauce to be as tasty as mine.

Ingredients

  • Cauliflower - 400 grams
  • Lemon - 30 grams
  • dill stalks
  • Salt - to taste
  • Oregano - to taste
  • Garlic - 1 clove
  • Mayonnaise - 1 tbsp. l.
  • Cheese (hard) - 50 grams

For the bechamel sauce:

  • Milk - 250 grams
  • Butter - 20 grams
  • Wheat flour - 20 grams
  • Salt - a pinch
  • Nutmeg - 1/4 tsp

in boiling and salt water we throw in a slice of lemon, dill stalks for flavor and cauliflower inflorescences. Cook for 4 minutes after boiling.

Melt the butter in a saucepan, add the same amount of flour and mix with sharp circular movements. You should get such lumps as I have in the photo below.

Now, without ceasing to interfere, gradually pour in the milk. All lumps should be completely dissolved and then it's time to add salt and, at the tip of a teaspoon, nutmeg.

Ingredients

  • Cauliflower - 500 grams
  • Sour cream - 200 grams
  • Onion - 1 pc.
  • Oregano - 1 tsp
  • Salt - to taste

Onions can be cut into any shape, but since this dish will be eaten by my family, and they don’t like it when it is felt, so I will cut it as small as possible.

We put a pot of water on the fire, the water must be well salted. We load the cabbage into the water and cook after boiling for 3 minutes. No more is needed, it should be semi-finished and during the stewing we will fully bring it to readiness.

Heat up in a frying pan vegetable oil and fry the onion first, until golden brown, and then add the cauliflower and fry for another 2-3 minutes. A beautiful crispy crust should form on the cabbage.

Cut the tomatoes into cubes with a side of about 1 cm. You can not remove the skin from them. But if you still love without it, then make an incision on the tomatoes and pour boiling water for 1 minute. Then cool quickly and remove the peel with a light movement.

Separate the cauliflower into florets and boil in salted water for 3 minutes. Then we transfer to a colander and let the water drain, and the cabbage to cool.

Since the family really loves my experiments in the oven, they also liked the next cauliflower creation. I wanted to cook something very quickly, but satisfying, and to look like a casserole.

And what can tie all the vegetables together besides the dough? Of course the egg!

We will need:

  • Cauliflower - 0.5 kg.
  • Semi-hard cheese - 0.1 kg.
  • Sour cream - 3 tbsp. l.
  • Garlic clove - 2 pcs.
  • Egg - 1 pc.
  • Dill greens - 0.5 bunch.
  • Ground black pepper, salt - to taste.
  • Butter - 10 gr.

Cooking:

1. As always, first the cabbage should be treated in salty cold water from insects, and then divided into inflorescences and boiled for about 5 minutes.

You can also use frozen vegetables if you like. But before cooking, it should be held on the kitchen table for 30 minutes.

Drain the broth and let the water drain from the whitened pieces. Allow to cool on the table while we do other preparations.

It is not worth covering them, so that as a result we have a gorgeous golden crust in each dish.

7. Serve the casserole slightly cooled so that the eaters do not burn themselves.

Then drain the broth and cool sharply with ice water. This technique always helps to boil vegetables very quickly and reach them to the desired state of semi-readiness.

Gratin sounds great! In fact, it's just a casserole! But to make it more interesting, it is best to add broccoli to our today's heroine. Both varieties complement each other perfectly.

And the nutmeg added to the dish will give a touch of aristocratic sophistication and piquancy.

We will need:

  • 20% cream - 1 cup.
  • Water - 2 liters.
  • Cauliflower, broccoli - 300 gr.
  • Hard-melting cheese - 200 gr.
  • Egg - 3 pcs.
  • Ground nutmeg - 1/3 tsp,
  • Butter - for greasing the form.
  • Ground black pepper, salt, breading - to taste.

Cooking:

1. First, rinse both varieties of cabbage from bugs, and then cut into approximately the same parts. Boil water in a saucepan with 1 tbsp. l. salt and throw two-color vegetable "umbrellas" into it for 10 minutes to cook.

Then rinse them with cold water and allow excess liquid to drain.

2. Grate the cheese and set the plate aside for now. Start preparing the filling.

How to cook cauliflower cutlets

Previously, cauliflower was not in such abundance on store shelves. And all dishes from it were considered a real delicacy.

And when I had a chance to try cutlets from it for the first time, I could not even understand what such yummy was made of.


Today, in every supermarket, this vegetable can be purchased for almost a whole year, and there are very, very many recipes for all sorts of cutlets. One of them, very tasty, I bring to your attention today.

We will need:

  • Cabbage - 1 kg.
  • Eggs - 2 pcs.
  • Flour - 100 gr.
  • Dill - 3 - 4 sprigs.
  • Breadcrumbs how many cutlets will take.
  • Salt, ground black pepper to taste.
  • Oil for frying.

Cooking:

1. Disassemble the cabbage into medium-sized "umbrellas". Pour briefly salted water to clean it from insects.
