  2. After 5 minutes, as soon as a little foam forms, the mixture is lightly whipped together with cocoa.
  3. Next, add a little honey, which makes the baked goods slightly sweet.
  4. Now the composition is replenished with flour, a thick dough is kneaded.
  5. Boiling water is poured into the resulting homogeneous mass.
  6. Now the composition is carefully placed on a baking sheet, then sent to a hot oven (160 °C) for 10 minutes.
  7. At this time, the cottage cheese, together with milk and lemon zest, are whipped into a homogeneous cream.
  8. When the cake is ready, the filling is laid out on it.

Soy is a controversial product; it has caused so much controversy among nutritionists! First of all, its origin. It seems like only a lazy person didn’t write that you need to buy products marked “does not contain GMOs.”

However, I ended up with exactly this flour. It is good because it has a light nutty flavor and contains a lot of protein. Although their digestibility is lower than that of animal proteins, this flour is healthier from a dietary point of view than refined white flour.

By the way, there is an opinion that soy flour can be used as an egg substitute. Don’t believe it, neither soy flour nor flaxseed flour can replace the binding properties of an egg.

This concludes my lyrical digression and suggests baking soy cookies. I came up with the recipe myself, to suit my own tastes and needs (lots of protein, less carbohydrates), believe me, it will turn out very tasty without white flour or starch!

How to make cookies

  4. Add soy flour, bran, soda (I add quicklime). Knead the dough thoroughly so that there are no lumps. The dough turns out moist, with a consistency similar to cottage cheese. That's how it should be.
  5. We wet our hands in a bowl of boiled water and make round cookies. The dough is not too sticky and the cookies form very well.
  6. Place them on a non-stick baking dish and poke holes with a fork.
  7. Place in a preheated oven, bake at 180 degrees for about 20-25 minutes.
  8. Serve hot cookies with tea.

The cookies turn out soft, crumbly, only 8 cookies, 40 g each.

There are variations in the baking process for the cookies, but I bake them regularly because I like the soy flavor and the recipe is very simple.

One day I was in a hurry and placed the baking dish not on the top rack of the oven, but on the middle one. And after 15 minutes I realized that the cookies were getting very brown on the bottom. Then I took them out, put them on a plate and baked them in the microwave, in microwave mode for exactly 3 minutes.

Since then, I don’t let any cookies sit in the oven for the allotted time; I let them brown and put them in the microwave. The taste does not suffer from this, and the cooking time is reduced.

It must be said that the calorie content of apples of different varieties can vary greatly. I have the most average indicators. I try to choose the most unsweetened apples, but not sour ones either.

As for bran, you don’t have to put it in at all. I add it for the reason that with a high-protein diet there is always a lack of fiber, but in these cookies you don’t feel it at all.

The result is an almost ideal ratio of BZHU and low calorie content. There are slightly more proteins than carbohydrates, only vegetable fats and then only a little. If you have a difficult day ahead, when you don’t have time to prepare a full lunch, these soy cookies are very helpful as a snack.
